Why it works

## Two ingredients means fewer places for carbs to hide.

Eggs and bacon are both close to carbohydrate-free on their own, so a recipe built from just those two doesn't need a low-carb workaround the way a muffin or a wrap would. Protein and fat also digest more slowly than a carb-heavy breakfast, which is part of why this can feel more steady through the morning than something like cereal or toast. Baking the mixture in a muffin tin does the portioning for you: each cup is already one serving, so there's no guessing how much to eat. It also means the whole batch bakes at once instead of standing over a pan cooking eggs individually.

### Ingredients

- 6 slices bacon
- 6 large eggs

### Instructions

Cook the bacon in a skillet over medium heat until lightly crispy, then remove and let it cool.

Break the cooled bacon into bite-sized pieces.

Crack the eggs into a bowl and whisk until well combined.

Preheat the oven to 350°F (175°C) and grease a muffin tin.

Divide the egg mixture evenly into the muffin tin cups using a measuring cup or ladle.

Add the bacon pieces evenly into each muffin cup.

Bake for about 15 to 20 minutes, or until the eggs are set and a toothpick inserted comes out clean.
