Why it works
The wrapper and the fryer were never the point.
A takeout egg roll gets most of its carbs from the fried wrapper, not from what's inside it. Strip that away and what's left is cabbage, ground meat, ginger and sesame, which is the part that actually carries the flavor. Cabbage is naturally low in carbohydrate, and using a bagged coleslaw mix means it's already shredded, so the whole dish cooks in one skillet in about 20 minutes. Restaurant versions can also vary a lot in oils and sauces from one kitchen to the next; cooking it at home means you control exactly what goes in.

Low-Carb Egg Roll in a Bowl
Sausage, cabbage, ginger and sesame, one skillet, no wrapper.
Ingredients
- 1¼ lb pork sausage, spicy, bulk sausage preferred
- 1 bag coleslaw mix, about 14-16 oz.
- ¼ cup water
- ½ tsp garlic powder
- 2 tbsp sesame oil, toasted
- ½ tbsp fresh ginger, finely minced
- 2 tbsp green onions, chopped
- 1 tbsp rice vinegar
- 2 tbsp tamari
- sea salt, to taste
- black pepper, to taste
- 1 tbsp sesame seeds, toasted, optional garnish
Instructions

Heat a large high-sided skillet over medium-high heat. Add the pork sausage and cook for 5 to 6 minutes, breaking it into small pieces as it browns. Drain excess grease if needed.

Add the water and scrape up any browned bits from the bottom of the skillet with a wooden spoon or spatula.

Reduce the heat to medium. Add the coleslaw mix, garlic powder, sesame oil, fresh ginger and green onions. Season with salt and black pepper to taste.

Cook for 4 to 5 minutes, stirring frequently, until the cabbage softens but still has a slight crunch.

Return the cooked sausage to the skillet and stir everything together until evenly combined.

Stir in the rice vinegar and tamari. Cook for another 1 to 2 minutes, until heated through.

Remove from the heat and divide between serving bowls. Top with toasted sesame seeds if desired and serve immediately.

Net carbs here means total carbohydrate (8g) minus fiber (3g). There are no sugar alcohols in this recipe, so nothing else is subtracted. Also per serving: 4g sugar, 14g saturated fat, 1426mg sodium, mostly from the tamari and sausage.

Notes and substitutions
Faster weeknight version. Pre-shredded coleslaw mix and pre-minced ginger cut down both prep time and cleanup without changing the result.
Tamari swap. Coconut aminos work in place of tamari for a slightly sweeter flavor.
Sausage swap. Plain ground pork works instead of sausage for a milder result; extra ginger or red pepper flakes bring back some heat if you want it.
Batch note. This keeps well in the fridge and reheats in a hot skillet; double the recipe for easy leftovers.
