Spicy Jalapeño Keto BLT Bites with Smoky Chipotle Mayo

Ingredients
- 6 slices bacon
- 1 English cucumber medium, sliced into rounds
- ¼ cup mayonnaise for smoky chipotle mayo
- 1 avocado large, sliced
- 2 tomatoes sliced and cut into portions
- ¼ cup cilantro chopped
- 2 jalapeños medium, thinly sliced
- 1 tsp chipotle powder or minced chipotle peppers
- 1 tsp smoked paprika
- 4 oz cream cheese softened
- ½ tsp garlic powder
- salt to taste
- black pepper to taste
Instructions
- Place bacon slices in a single layer in a cold, large skillet. Heat over medium heat.
- Cook bacon, flipping as needed, until cooked through and crispy, about 10 to 12 minutes.
- As bacon slices finish cooking, remove from heat and place on a papertowel lined plate to drain. Set aside to cool.
- Meanwhile, slice cucumber at an angle into 12 slices.
- Once the bacon is cooled, break into smaller strips
- In a small bowl, mix mayonnaise, cream cheese, chipotle powder, smoked paprika, garlic powder, salt, and black pepper until smooth.
- Thinly slice the jalapeños.
- Assemble the BLT bites by spreading each cucumber slice with smoky chipotle mayo.
- Top with avocado slices, tomato pieces, crispy bacon, and jalapeño slices.
- Garnish with chopped cilantro and serve immediately.
