Why it works
The carbs were always in the shell, not the filling.
A taco's carb load lives almost entirely in the shell. Take the shell out and what's left is beef, fat, a little dairy and a small amount of tomato: a combination weighted heavily toward protein and fat. The cheese shell here does two jobs. It replaces the structure a tortilla provided, and it adds protein rather than starch. 85g of cheddar carries about 19g of protein and under 3g of carbohydrate, on USDA FoodData Central's figures for cheddar. That's why these hold you through an evening in a way a lettuce wrap generally doesn't.

Keto Taco Cups
Crisp cheddar shells filled with seasoned beef, tomato, scallion and sour cream.
Ingredients
Shells
- 85 g sharp cheddar, shredded from a block
Filling
- 4.5 g olive oil
- 340 g ground beef, 85% lean
- 4 g ground cumin
- 2 g smoked paprika
- 4 g chili powder
- 30–45ml water, as needed
- Salt and black pepper, to taste
To finish
- 15 g scallion (1 medium), thinly sliced
- 123 g tomato (1 medium), seeded and chopped
- 48 g sour cream
- 1 lime, cut into wedges
Instructions
Bake the Shells

Heat the oven to 350°F (175°C) and line a rimmed baking sheet with parchment or a silicone mat.

Spoon the cheddar onto the sheet in 1-tablespoon mounds, six per sheet, leaving 2 to 3 inches between them. Flatten each one lightly.

Bake until the centers have melted flat and the edges have just started to brown, about 5–6 minutes.

Rest the rounds for 1 to 2 minutes. That is long enough to stop them spreading, not long enough for them to set hard.

Lift each round with a spatula and press it over the back of an inverted muffin tin to form a cup. The cheese stays pliable for about a minute.

Cool the cups on the tin until firm, then lift them off. Repeat with the remaining cheese.
Cook the Filling

Heat the olive oil in a medium skillet over medium heat.

Add the ground beef and cook, breaking it up, until browned through, about 5–6 minutes. Drain off the excess fat.

Stir in the cumin, smoked paprika, chili powder and 2 tablespoons of water, then season with salt and pepper.

Cook another 1 to 2 minutes, until the spices smell toasted and the meat is glossy rather than dry. Add the last tablespoon of water if it tightens up.
Assemble

Fill each cup with the beef, then top with tomato, scallion and a teaspoon of sour cream.

Squeeze a lime wedge over each one and serve straight away.

Net carbs here means total carbohydrate (4.9g) minus fiber (1.2g). There are no sugar alcohols in this recipe, so nothing else is subtracted. Also per serving: 1.7g sugar, none of it added. Calculated per ingredient from USDA FoodData Central, using raw 85% lean ground beef. Draining the fat after browning runs the real fat and calorie figures a little lower.

Notes and substitutions
Fill them at the table. The shells go soft if they sit. The cups keep in an airtight container for two days on their own; the beef keeps four days in the fridge.
Cheese swaps. Any hard, low-moisture cheese works: Monterey Jack, Colby, aged Gouda, or parmesan for a sharper, more brittle shell. Fresh mozzarella doesn't; it has too much water and steams instead of crisping. Carb impact is negligible either way, under 1g across the whole batch.
Dairy-free. There is no dairy-free version of a cheese shell. Serve the same filling over shredded cabbage or cauliflower rice instead, and skip the sour cream. That takes the serving down by roughly 0.6g of net carbs.
Ground beef swaps. Ground turkey, chicken or pork all work, and none of them change the carb count. Leaner grinds need the full 3 tablespoons of water.
Making it a bowl. The same filling over 150g of cauliflower rice adds about 3g of net carbs per serving, and turns into the low-carb taco bowl.
Batch note. Doubling works, but bake the rounds six to a sheet regardless. Crowd them and they run together into one sheet of cheese.
Common questions
Why did my cheese rounds not hold their shape?
They were either too hot or too cold when you shaped them. Straight from the oven they tear; fully cooled they crack. The window is about a minute after they come out, once the bubbling stops but while they still bend.
Can I use pre-shredded cheese?
You can, but the results are worse. The starch coating that stops bagged cheese clumping also stops the shreds fusing, so the rounds come out lacy and fragile. Shredding a block takes two minutes and costs less.
How many carbs are in a keto taco cup?
About 1.3g of net carbs each, or 3.8g for a serving of three. Most of that comes from the tomato and sour cream rather than the shell, so leaving off the toppings drops it further.
Can I make the shells ahead?
Yes. Bake and shape them up to two days ahead and keep them in an airtight container at room temperature. They soften in the fridge, so leave them out.
